2 English muffins
½ medium yellow onion, ¼-inch slices
½ red bell pepper, ¼-inch slices
2 hash brown patties, frozen

Sauté the onions and peppers

Heat a small skillet over medium-high heat. Add a bit of oil, then add the sliced onions, bell peppers, and a pinch of salt and pepper. Sauté until softened and starting to brown and blister in spots. Remove from skillet and set aside.

Cook the hash browns

Heat the hash brown patties according to the package directions.

Heat the JUST Egg Folded

Heat up the two JUST Egg Folded in a toaster, skillet, oven or microwave, according to the box directions.

Assemble the sandwich

Split open and toast the English muffins, if desired. Spread both halves with mayo. Layer a hash brown on each bottom half, followed by a folded JUST Egg. Top the with desired amount of sautéed onions and peppers. Season with salt and pepper. Close the sandwich and enjoy immediately – or take it to-go.
