Its foundational ingredient? A 4,400-year-old legume called a mung bean that magically scrambles like an egg.

We certainly didn’t invent the mung bean or teach a single farmer how to grow it. We were lucky enough to find something that has already impacted our food system for thousands of years and turn it into a meal that will impact it for thousands more. “It’s not every day you see something that blows your mind,” said José Andrés, an internationally acclaimed chef and restaurateur.

JUST Egg is free of cholesterol, requires less water and fewer carbon emissions. And yes, it tastes like an egg, but it’s more than that. “It’s got endless, limitless applications. That’s what's brilliant about it,” said Marut Sikka, one of India’s top chefs.

In so many ways, building a more just food system starts with breakfast. 

An egg is the world’s most abundant animal protein and a part of our diet that consumes too many resources. A few years ago, we decided to work with farmers to see if we could come up with a long-term approach to a more sustainable, tastier breakfast for billions of people. That seems like a big and complicated endeavor, and it is, but our work with farmers isn't that complicated. Because farmers, much more than our team, know their land and soil and how to build a healthy, sustainable food system. We learned from the real experts and built a discovery platform to find the best of what they've been growing for thousands of years, including our magical mung bean. Then we source it and scale and scramble it for all of you, starting now.
