What is the company’s approach with respect to allergens?

We work hard to be as friendly and transparent as possible to those with food allergies.

While some of our products contain common allergens, we label them in the ingredient statement on the back of our product.

We use third-party facilities to manufacture our products, so we can’t guarantee our allergen-free products are made on designated allergen-free lines or in allergen-free facilities. For example, JUST Egg is egg-free, but is made in a facility where egg is present. In order to lower the risk of incidental contact with allergens from other products manufactured in the same facility, we require our third-party manufacturers employ rigorous sanitation, inspection and good manufacturing practices.

Please consult our allergen information chart for a full list of what allergens are present in our facilities and shared lines. As we grow, we expect to have lines – and perhaps facilities – that are fully dedicated to manufacturing JUST Egg.

Our pourable JUST Egg is kosher-certified by the Orthodox Union. JUST Egg Folded is not kosher-certified at this time.

Why do you use canola oil?

Accepted Answer

Canola oil is high in monounsaturated fats and low in inflammatory, polyunsaturated Omega 6 fats, making it one of the healthier oils used in food. Additionally, the canola oil we source for our retail products is a non-GMO, expeller-pressed oil. We don’t use any chemical solvents in the extraction process.

JUST Egg is made from mung beans, which contain a protein that tastes and scrambles like eggs. The mung bean is a protein-rich legume that has been cultivated around the world for thousands of years and is a staple in many global cuisines. Mung beans are a sustainable crop and are rich in potassium, magnesium and dietary fiber. JUST Egg gets its egg-yolk golden color naturally from turmeric and carrot. How much JUST Egg equals one chicken egg?

3-4 tablespoons or 1.5-2 oz of liquid. You can usually use it in a 1:1 substitution. Check out our recommended recipes for tips and techniques.

Is a mung bean egg replacement better than a chickpea-based egg replacement?

Accepted Answer

Both chickpeas and mung beans are considered healthful ingredients. However, mung beans are higher in protein and carbohydrates while chickpeas are higher in fat. The macronutrient ratio (protein: carbohydrate: fat) of each is: 21:65:14 for chickpeas and 27:70:3 for mung beans. Mung beans are more similar to eggs in a couple of important ways, making them an ideal egg replacer. They have many of the same amino acids as eggs, they are a natural emulsifier and their protein behaves in an egg-like way in recipes.

How do I scramble JUST Egg?

Like an egg: Preheat a nonstick sauté pan over medium heat, along with a small amount of oil or butter (optional). Pour desired amount of JUST Egg into the hot pan. As the JUST Egg begins to cook and set, use a rubber spatula to gently pull the mixture across the pan and turn over toward the center, forming large, soft curds. Continue pulling and lifting the cooked egg toward the center of the pan until the mixture looks completely cooked and none of it looks liquid. Remove from heat and enjoy immediately. How do I cook JUST Egg Folded?

Heat in a toaster, skillet, oven or microwave, according to the box directions.
Toaster: Place in a standard toaster and heat on high for 6 ½ minutes.
Skillet: Warm a bit of oil in a non-stick skillet over medium heat. Cook for five minutes and flip halfway through.
Oven: Preheat oven to 375°F. Wrap in foil and bake for 15 minutes.
Microwave: Wrap in a damp paper towel, place on a microwave-safe plate and heat on high for 1 ½ minutes. Cook for about two minutes on each side, until heated through and lightly browned.

Our pourable JUST Egg is great for scrambles, omelets, quiches, frittatas, veggie stir-fries, vegan French toast, waffles, crêpes, pancakes, breakfast sandwiches and much more. We don’t recommend JUST Egg for recipes incorporating raw egg, like homemade mayonnaise or egg white cocktails.

JUST Egg works in a wide variety of baking applications, with a few exceptions, such as light, airy cakes and meringues. We encourage you to try it in your favorite recipes and let us know how it goes for you. We’re always working to improve JUST Egg and would love to hear your feedback. You can usually use it in a 1:1 substitution, assuming that a chicken egg is 3 to 4 tablespoons or 1.5 to 2 oz of liquid. Check out our recommended recipes for tips and techniques.

Separation is natural (as long as it’s within the "use by" date). Make sure you shake the bottle thoroughly before using, as directed on the bottle.

Yes, our JUST Egg products are Non-GMO Project Verified. While our full line is not organic, JUST Egg is completely plant-based, carrageenan-free and made with no artificial flavors.

We do not recommend that you consume our products once the date has passed. The date printed on the package is valid for unopened products or opened products that have been stored appropriately. Please dispose of any product (opened or unopened) that is past the “best by” or “use by” date.

Our cartons utilize paper from trees grown in forests where responsible practices are used, and it can be recycled in most U.S. municipalities. We recommend checking with your local municipal department for more recycling information as local recycling capabilities vary across the country. You can also visit the Carton Council's website to see if your community recycles cartons.

If I recycle it, should I leave the cap on or take it off?

Leave it on, please. Depending on where the carton ends up after being recycled, the plastic components are recycled along with, or separated from, the paper.

Can you make your cartons without the plastic spout?

The plastic spout is a necessary feature of the package design. It helps to preserve the shelf life of the product from manufacturing to your refrigerator, and offers an airtight seal in between uses.

What is the new packaging made of?

The carton is made of about 70% paper from trees grown in forests where responsible forestry practices are used. The remaining 30% is a plastic barrier used to protect and extend the shelf life of our eggs.

This road has been longer than we expected. We investigated every packaging innovation we could find to land on the best option, and all that research and testing takes time. In this search, our goal wasn’t just to find something more sustainable, but also to ensure our prices would stay accessible. We’re glad to finally be moving away from plastic, a change our fans have requested since JUST Egg first debuted in 2019, but we’re not stopping here. We’re on a mission to help build a better, more sustainable global food system. Sometimes the solutions are complex and time-consuming, but it’s always worth it to make progress toward a more sustainable world.
