Jrue Holiday’s favorite JUST Egg breakfast sandwich is a sweet and savory slam dunk with hot honey, cream cheese and fresh arugula.
- 2 JUST Egg Folded or ⅔ cup JUST Egg
- 1 English muffin, toasted
- 2 teaspoons hot honey (see note)
- 2 tablespoons plant-based cream cheese
- ½ cup arugula
- Coarse salt

Cook the JUST EggEgg
If using JUST Egg Folded, heat in a toaster, oven, skillet or microwave according to the directions on the box.
If using JUST Egg, scramble (like an egg) in nonstick skillet over medium heat with a bit of oil. Stir occasionally as it scrambles. Once the liquid is cooked through, remove from heat.

Toast the English muffinmuffin
While the JUST Egg cooks, split and lightly toast the English muffin.

Assemble the sandwichsandwich
Spread one half of the English muffin with cream cheese and drizzle the other with hot honey. Sprinkle one of the sides with some coarse salt. Stack on half of the JUST Egg, followed by the arugula, then the rest of the JUST Egg.
Make a vegan-friendly hot honey by simmering plant-based honey or similar sweetener with spicy, dried chilis.
