Makes 2 sandwiches

  • 2 everything bagels
  • 1 cup JUST Egg or 2 JUST Egg Folded
  • 2 slices plant-based cheese
  • Hot sauce (optional)


  • Nonstick skillet

Cook the JUST Egg

If using JUST Egg, scramble (like an egg) in non-stick skillet over medium heat with a bit of oil. Stir occasionally, letting it set into large curds that will hold together nicely in a breakfast sandwich. Once the liquid is cooked through, remove from the heat.

If using JUST Egg Folded, heat in a toaster, oven, skillet or microwave according to the directions on the box.

Split and toast the bagels. Layer a slice of cheese on the bottom half of each bagel. Top the cheese with the cooked JUST Egg. Add a dash of hot sauce or cracked black pepper, if desired.

Close the sandwich and enjoy immediately – or take it to-go.
