Need to dial down the heat? Swap out the jalapeños with bell peppers or your favorite veggie and use our plain vegan mayo instead of chipotle.   • 2 JUST Egg Folded or ¾ cup JUST Egg
  • 4 pieces of thickly sliced bread
  • 2 tablespoons butter, softened
  • 1 jalapeño pepper, sliced (see note)
  • slices pepper jack cheese, or other cheese
  • JUST Chipotle Mayo

Sauté the jalapeños

Heat a medium skillet over high heat. Add a bit of oil, then add the sliced jalapeños and a pinch of salt. Sauté until softened and starting to brown and blister in spots.

Cook the JUST Egg

If using JUST Egg Folded, heat in a toaster, air fryer, skillet or microwave according to the package directions.

If using pourable JUST Egg, scramble like an egg in nonstick skillet over medium heat with a bit of oil. Stir occasionally, letting it set into large curds that will hold together nicely in a breakfast sandwich. Once the liquid is cooked through, remove from the heat.

Pan-fry the bread

Heat the skillet over medium heat. Lightly butter both sides of the bread slices. Fry the bread slices until browned and crispy on both sides, using a spatula to press it down lightly and help fry evenly.

Assemble the sandwich

Spread each piece of bread generously on one side with JUST Chipotle Mayo. Layer the bottom pieces of bread with two slices of cheese each. Top the cheese with JUST Egg Folded, followed by sautéed jalapeños. Close the sandwich and enjoy immediately – or take it to-go.
