Go the distance with Scott’s favorite, nutrient-packed sandwich with JUST Egg Folded and a Jamaican-style jerk black bean spread.

You’ll make more of the sandwich spread than you need for this recipe – use this flavorful, fiber-rich spread throughout the week on sandwiches, in wraps or as a dip for veggies and chips. 

Says Scott, “I’m a big fan of incorporating beans into more meals and this spread is a great way to do that. They’re nutrient-dense, easy to work with and add that extra boost of carbs and protein I’m looking for when I’m in training mode.”

  • 1 JUST Egg Folded
  • 2 slices of sprouted grain sandwich bread
  • ½ cup arugula
  • 2 slices of tomato
  • ¼ of an avocado, sliced
  • 1 pinch of pickled red onions (or other pickle or kraut)
  • 2-4 tablespoons black bean sandwich spread

Pickled red onions

  • 2 tablespoons white vinegar
  • 1 teaspoon salt
  • 2 teaspoons organic sugar

Black bean sandwich spread

  • 1 red bell pepper, diced
  • ½ teaspoon olive oil
  • 1 ½ cups cooked black beans (1 can)
  • ½ cup cashews, soaked overnight
  • 1 lime, juiced
  • 2 tablespoons nutritional yeast
  • 2 teaspoons Jamaican-style jerk seasoning
  • ¾ teaspoon salt

Make the black bean spread

Soak the cashews in water for at least 2 hours, ideally overnight (or if you’re in a rush, you can boil for 10 minutes). Preheat the ½ teaspoon of olive oil a small nonstick skillet on medium-high heat. Sauté the diced bell pepper until softened and browning in spots, about 5 minutes. Remove from the heat and transfer to a high-speed blender or food processor. Add the rest of the spread ingredients and process until smooth, adding water as needed, 1 tablespoon at a time, to help it blend. Taste for salt. Transfer the mixture to a container and keep refrigerated.

Pickle the red onions

Thinly slice half of a red onion, and transfer to a jar or similar container. Add the vinegar, salt and sugar and shake vigorously. Let the onions pickle for at least 5 minutes, giving them another shake or two while they do. Keep in the fridge until ready to use.

Heat the JUST Egg Folded

Heat desired the JUST Egg Folded in a toaster, skillet, air fryer or microwave, according to the box directions.

Assemble the sandwich

Toast the bread, if desired. Spread both slices with black bean spread. Layer the bottom slice with the JUST Egg Folded, sliced tomato, avocado, pickled red onions and arugula. Close the sandwich and enjoy immediately, or wrap it up and take it to-go.
