Warm a bit of oil or butter in small, non-stick skillet over medium heat. Pour in the JUST Egg and scramble like an egg: Use a stiff spatula to stir occasionally, while still letting the JUST Egg heat evenly and set. Once the liquid is cooked through, remove from the heat.
If using JUST Egg Folded, heat according to package directions.
Split and toast the bagels. Layer a slice of cheese on the bottom half of each bagel. Top the cheese with the cooked JUST Egg. Add a dash of hot sauce or cracked black pepper, if desired.
Close the sandwich and enjoy immediately – or take it to-go.
